Hemp Lemon Bar Recipe

Ingredients
Crust
1 cup cashew flour
1/4 c raw hemp seeds
3 T coconut oil
1 T raw honey
pinch of sea salt

Filling
1/4 cup cashew flour
1/4 cup honey
4 large eggs
1/2 cup fresh lemon juice
finely grated lemon zest

Directions
1. Preheat oven to 350 degrees. Lightly grease square baking dish with coconut oil.
2. To make the crust, combine cashew flour, hemp seeds and sea salt in large bowl. Stir in coconut oil and mix thoroughly until dough forms. Press the dough evenly into bottom and slightly up the sides of baking dish. Bake for about 15 minutes until golden.
3. While the crust is baking, prepare the filling. Whisk together cashew flour, honey, eggs, lemon juice and lemon zest.
4. Remove crust from the oven and pour filling over the baked crust. Then bake again for 20 minutes until golden at edges. Cool for 20 minutes then refrigerate for 2 hours to set. Cut into bars and enjoy!
