The original draft of the Declaration of Independence was written on hemp paper. What better way to celebrate our nation’s birthday than this Paleo version of the Patriotic Flag Fruit Pie. The crust is made with raw hemp seeds, almond meal, coconut oil, and a little bit of honey. Greek yogurt is the frosting, and topped with strawberries, bananas, and blueberries for the red, white and blue. It is delicious, patriotic and healthy!
1 cup almond flour
1/4 c raw hemp seeds
2/3 c coconut oil
1 T honey
couple big dollops Greek yogurt
1 lb Strawberries
1 pint Blueberries
1. Preheat oven to 350 degrees. Grease large rectangular baking dish with coconut oil.
2. Mix together almond flour and hemp seeds in large bowl. Stir in coconut oil and honey. Press dough evenly onto bottom of baking dish. Bake for about 15 minutes until golden.
3. While crust is baking, wash strawberries and blueberries. Peel banana(s). Slice strawberries and bananas into coins.
4. Remove crust from oven and let cool for 5-10 minutes. Spread yogurt over baked crust. Place blueberries in rectangular shape in upper left corner. Then layer strawberries and bananas in alternating rows to make the stripes.
